Banana Muffins

These muffins are awesome! A friend shared this recipe with me a while back. It sin't in my Sneaky Chef cookbook, but I'm pretty sure that it comes from one of her other books.

My daughter will eat bread, not much else. These are stuffed full of fruit and veggies and great grains. They are so healthy and so yummy! You will be amazed at how light and fluffy they are and they taste just like banana muffins.

Ingredients:
1 egg
1/4 c. sugar
1/4 c. canola oil
6 T. orange puree
2 large bananas, mashed
1 tsp. vanilla
3/4 c. flour blend
2 tsp. baking powder
1/2 tsp. cinnamon
1/2 c. oat bran
1/2 tsp. salt
1/4 c. walnuts for topping (optional)

Preheat oven to 375 degrees.

In a bowl whisk the eggs and sugar until combined. Add oil, orange puree, bananas, and vanilla. Mix the dry ingredients together in another bowl and then fold together. Do not over mix.

Fill 12 muffin cups and sprinkle with walnut topping (if you want to) then bake for 25 minutes.
